YUM!

I know its summer, and this isnt something you usually eat during the summer, but I had to share this recipe with you! It is so good, and very simple to make.

Chili Con Carne-this recipe came from my cousin Rebecca

1 pound ground beef
1 medium green pepper, chopped
1 can(about 15 ounces) kidney beans, rinsed and drained
1 can(11 1/8 ounces) CAMPBELL'S condensed Italian Tomato Soup-I usually just use regular Tomato, and it works just as well.
3/4 cup water
1 tablespoon chili powder
1 tablespoon vinegar
tortilla chips, sour cream, fresh cilantro, chili powder and cheese for garnish.

-In 10-inch skillet over medium-high heat, cook beef and green pepper until beef is browned and pepper is tender, stirring to separate meat. Spoon off fat.

-Stir in beans, soup, water, 2 tablespoons chili powder and vinegar. Heat to boiling. Reduce heat to low. Cook, uncovered, 15 minutes, stirring occasionally. And then garnish with your choice of toppings.


Cornbread- my mother in laws recipe, so good!!

1 box yellow cake mix
1 box cornbread mix

- mix dry cake mix and dry cornbread mix together.
-follow directions on the cake mix.

Tim and I love having this for dinner! Try it sometime!

1 year down, forever to go!



Tim and I celebrated our 1 year anniversary on June 11th! We were lucky enough to celebrate with all of family by going to the Salt Lake Temple to be sealed together as a family forever. My mom watched Conner for us so we could go to dinner and a movie and stay in a hotel for our anniversary. It was our first night away from Conner, and as much as we missed him, it was a much needed break! We are so grateful for the opportunity we have to be together forever! We have done a lot in one year. We moved 3 times, one of the moves was across the country. We've owned 4 different cars. Tim has attended 2 schools. We've had 3 different jobs. We had a baby! And so many other things! Were excited for all of the wonderful memories that are ahead of us!

Conner's Teddy and Cafe Rio Salad

So in the move nothing was broken, and only one thing got lost.. Conner's teddy bear, out of all the things to loose, so random. Well Tim's mom sent Conner a cute little lion because she felt so bad that he lost his teddy! Its so cute and Conner already loves it!

Cafe Rio

We dont have Cafe Rio down here and Tim and I were craving it so bad! My sister gave me a recipe for Cafe Rio Salads a long time ago and it tastes just like them!

Cafe Rio Salad

Dressing

1 buttermilk ranch dressing packet (make as per recipe) 2 tomatillos (tomato like vegetable with a husk around them) 1/2 bunch of cilantro 1 clove garlic juice of 1 lime 1 jalapeno (use the seeds too if you like it spicy. You could substitute a few drops of green Tabasco for the jalapeno.)

*use a food processor to blend all together well and refrigerate.

Chicken

1 small bottle Kraft Italian Dressing 1 T chili powder 1 T Cumin 3 cloves garlic-minced 5 lbs chicken breasts

*cook all together in a crock pot for 4 hours, shred meat and cook 1 additional hour.

Rice

3 c. water 4 t chicken bouillon 4 t garlic-minced 1/2 bunch cilantro 1 can green chiles-or fresh equivalent 3/4 t. salt 1 T butter 1/2 onion 3 c. rice

*blend cilantro, green chiles and onion together in food processor. Bring water to a boil and add all ingredients, simmer covered 30 minutes.

You can make your own Pico or buy your own, I just make mine up with tomatoes, onions, cilantro, lime juice and salt

You can also make your own tortillas, you can find uncooked tortillas at Maceys and Costco.

You can then add pinto/black beans, lettuce and tortilla chips.
